How to organise a romantic and original Valentine’s day at home !

Valentine day is always for me a special night for many people,  frankly, I’d rather stay at home and wait for it all to blow over. But a cozy night at home with your valentine can be pretty special if you take a few extra steps to make it more of an event than your regular weeknight dinners.

How to make  choux pastry

  1. Choux pastry is the lightest, crispiest, airiest pastry, which can be used to make profiteroles, éclairs or savoury gougères. It puffs up in the oven until it is eventually set by the heat. The airiness, in fact, is caused because choux has a high water content, which is turned into steam during baking and this forces the pastry shell outwards and gives it volume.

This a easy recipe I do everytime for my sweet canapes party ….

Ingredients

140g g Strong White Bread Flour o

110g  Butter

25cls Water or milk

5 Eggs

4 gr of salt

METHOD

Combine the milk, 125ml water, the butter and salt  in a saucepan and set over a low heat. Bring the boil and immediately take the pan off the heat. Shower in the flour and beat the mixture with a wooden spoon until spoon. Return the pan to a medium heat for about 1 minute, stirring constantly, to dry out the paste. Tip it into the bowl. Add the eggs one by one, beating with the wooden spoon. Once they are all incorporated into the mixture, it should be smooth and shiny and thick enough to pipe. The choux paste is now ready to use. (If you are not using it immediately brush the surface with eggwash to prevent a crust forming) Pipe small mounds on a baking sheet line greaseproof paper in staggered rows, using a bag fitted with a 1cm nozzle. Brush with eggwash and lightly mark the tops with the back of a spoon. Bake at 200ºC/Gas 6 fir 15-20 minutes until crisp, but still soft inside. Cool on a window sill.

Basil ice Cream, The perfect flavour of sweetness..

All about a nice dessert Let share my recipe for Basil ice Cream !!

Ingredients

  • 150g fresh basil leaves and stalks
  • 120g caster sugar
  • 4 medium egg yolks
  • 250ml full cream milk
  • 150ml pot double cream
  • Raspberries and extra basil leaves, to garnish

How to make basil ice cream

1. Put the basil and the sugar into a small food processor and whiz until the basil is finely chopped and the sugar turns bright green.

2. Whisk the egg yolks with the basil flavoured sugar in a bowl until thick and creamy.

3. Warm the milk then whisk it into the egg mixture. Strain the mixture back into the pan and cook over a low heat, stirring until it is thick enough to coat the back of a wooden spoon. Do not let it boil. Pour into a chilled bowl and leave to cool.

4. When this custard is cold, whip the cream and fold it in. Pour the mixture into an ice cream maker and follow the instructions. If you don’t have an ice cream maker, Tips!
if you don’t have any ice cream machine, freeze the ice cream for several hours or overnight, Blend with food processor and you will get a nice ice cream

5. Take the container out of the freezer and put into the fridge for 10-15 minutes before serving, to let it soften.

Now, Enjoy your dessert with a nice roasted figs with your basil ice crean with raspberry coulis !
